The Birthstone Tart (September Sapphire), first released in a limited quantity in August, is returning due to strong demand. The tart brings together September's two birthstones — the deep, clear blue of sapphire and the soft, pale tone of kunzite — expressed through Harapecolab's signature kanten confection, こうぶつヲカシ, and arranged on top of a chilled cassata cream ice tart. Each piece of こうぶつヲカシ is hand-cut, giving it the look of a miniature mineral specimen. While the standard こうぶつヲカシ has a crisp texture from being dried, the version used on the tart is freshly cut, with a soft, springy bite and a moist, translucent look. Layering deep sapphire blue with delicate kunzite tones, it's an "edible birthstone" available only in September, offered again in a limited quantity — suited as a birthday gift for those born in September, a treat for oneself, or a gift for someone special.

A Rich Yet Light Ice Cream Tart
The tart base uses a smooth cream made from fresh cream and ricotta cheese, the same combination used in Harapecolab's popular 「宝石のカッサータ」. Fragrant, toasty nuts and a hint of fresh lemon peel are folded into the cream for extra texture and brightness, giving it a rich yet light, smooth finish. The deep blue sapphire-colored こうぶつヲカシ carries a refreshing mint flavor, made with a homemade mint syrup steeped from mint leaves. The pink pieces are peach-coconut flavored, and the light blue pieces are cider-flavored, so the taste changes by color. It's best enjoyed after taking it out of the freezer and letting it sit at room temperature for a little while, once the cream starts to soften. The springy bite of the glossy こうぶつヲカシ on top pairs well with the creamy ice tart underneath.
