A cream puff inspired by the classic retro sweet "lemon cake" is coming to Beard Papa locations nationwide. The new June-limited "Lemon Cake Shu" goes on sale June 1, 2026.

Rather than leaning into the sharp, refreshing sourness that lemon is typically associated with, the Lemon Cake Shu aims for a mellow sweetness with restrained acidity — paired with a brand-new fluffy texture that echoes the gentle bite of traditional lemon cake.
The choux pastry was newly developed for this item, blending almond flour and a wheat flour typically used for French baguettes in a proprietary ratio. Shaped into a lemon form and baked, the result is a choux with a lightly crisp exterior and a soft, pillowy interior. The outside is then generously coated in rich, sweet lemon chocolate, delivering a full lemon fragrance from the very first bite.
Inside sits a smooth "Lemon Custard Cream" with lemon peel, which highlights the Setouchi lemon's natural aroma while drawing out the richness and sweetness of the custard base. The combination creates a hybrid sweet that feels nostalgic yet completely new — a tribute to the beloved lemon cake, reimagined in choux form.
