Dashi Okume Opens First Kanagawa Store at Yokohama Bay Quarter in December 2026

Yokohama Bay Quarter, the shopping mall by Yokohama Station's East Exit operated by Yokohama Daiya Building Management Co., Ltd., is welcoming Dashi Okume, an additive-free dashi specialty store, marking the brand's first location in Kanagawa Prefecture. Details of the December 2026 opening are as follows.

Dashi Okume is run by Okume Shoten, a dried-goods wholesaler at Toyosu Market founded in 1871. Drawing on more than 150 years of experience selecting ingredients, the store has pursued dashi made entirely from additive-free, domestically produced dried ingredients.

Every product Okume carries is additive-free, made without any umami seasonings such as yeast extract or extract powder. The Yokohama store will stock newly developed seasonings and rice accompaniments built around the umami of dried ingredients, Japanese food items gathered from across the country, and more than 15 original miso varieties created together with miso breweries nationwide to pair with Okume's dashi.

The store's signature Made-to-Order Dashi Pack is also a service available only at Dashi Okume, said to be the world's first of its kind (according to Okume's own research). Customers choose their blend by viewing the dried ingredients displayed in the store's showcase and checking their aroma directly. Beyond a recommended "golden ratio," blends can also be customized down to the gram, opening up nearly endless combinations. The selected ingredients are then ground and packed on the spot at the in-store processing area.

With Dashi Okume joining its lineup, Yokohama Bay Quarter further enriches the food experiences found only there, offering customers new discoveries in food.
