DRAGON HOT POT, a malatang specialty restaurant that originated in Melbourne, Australia, will hold the grand opening of its Roppongi location on Monday, November 16, 2026. It will be the brand's second location in Tokyo.
The restaurant's biggest feature is a large showcase stocked like a supermarket. More than 100 ingredients are on display at all times, and up to about 140 at peak, so diners can freely combine whatever they like to make their own bowl of malatang.
With its wide selection of ingredients and spacious dining room, the restaurant offers the fun of choosing and the joy of eating in a way that differs from conventional malatang specialty restaurants.
To mark the opening of the Roppongi location, the Kanda location, the brand's first in Tokyo, is also lowering its malatang price per gram by 20 percent, from ¥5 per gram to ¥4 per gram.
A Supermarket-Style Malatang Restaurant with Over 100 Ingredients

Walking into a DRAGON HOT POT restaurant, the first thing that catches the eye is a large showcase filled with colorful ingredients.
Fresh vegetables, mushrooms, meat, seafood, and noodles are all there, along with bunmoja (ブンモジャ) and circus dumplings (サーカス団子), ingredients popular in authentic malatang. More than 100 kinds are available at all times.
With up to about 140 kinds on display at peak, choosing feels like shopping at a supermarket, and diners can pick what they like as much as they like.
- "I want to load up on vegetables."
- "Today I want to focus on meat."
- "I want to try an ingredient I've never had."
Each bowl can be customized to the diner's tastes and mood.
Even the time spent choosing ingredients becomes part of the enjoyment of the meal.
DRAGON HOT POT offers not only a bowl of malatang to eat, but also the experience of putting together a bowl of your own.
A Rich Golden Soup Made from Beef, Pork, and Chicken Bones and Simmered for Over 12 Hours

Alongside the wide range of ingredients, the restaurant puts great care into the soup, which largely determines how good a bowl of malatang tastes.
The broth is made by carefully extracting stock from three kinds of bones (beef, pork, and chicken) and simmering it for more than 12 hours to bring out the flavor of each ingredient.
More than 20 kinds of Chinese herbal ingredients and spices are then added, giving the soup a rich depth and a complex aroma that is distinctive to the restaurant.
The result is a rich soup in which the flavors of beef, pork, and chicken layer together, balanced with the kick and aroma of spices.
Choose, Hesitate, Savor: A "Dining Attraction" Even for Those Who Don't Like Spicy Food

The appeal of DRAGON HOT POT goes beyond the selection of more than 100 ingredients.
Standing in front of the large showcase of colorful ingredients, thoughts like "What should I put in today?" and "I'm curious about that one too!" make the time spent hesitating part of the fun.
Diners choose their ingredients, choose their soup, and choose their spice level, creating a bowl that suits their own tastes and mood that day.
Malatang is often thought of as a spicy dish, but DRAGON HOT POT also offers soups that are not spicy. Even people who don't like spicy food or want to avoid very spicy dishes can find a flavor that suits them.
In the spacious dining room, diners can compare their bowls with friends and family or try ingredients for the first time.
The fun of choosing, the fun of hesitating, and the fun of eating.
What DRAGON HOT POT proposes is a new malatang experience that is more than just a meal, something like a "dining attraction."
