Fairmont Tokyo Launches French-Inspired Summer Kakigori at Vue Mer Lounge

As Fairmont Tokyo marks its first anniversary this summer, the hotel's 35th-floor lobby lounge "Vue Mer (ビュメール)" is introducing two new summer-limited kakigori (Japanese shaved ice) desserts: "Mango & Crème Brûlée Kakigori" and "Peach & Meringue Kakigori," available from July 1, 2026 (Wednesday).

Drawing on the blend of French and Japanese lounge culture that defines Vue Mer, these desserts reimagine the quintessentially Japanese summer treat of kakigori through the lens of French patisserie. Each carries its own distinct character, layering seasonal ingredients atop light, melt-in-your-mouth shaved ice.

This kakigori pays tribute to the classic French dessert crème brûlée. Fluffy shaved ice coated in house-made mango sauce is layered with smooth vanilla chiboust cream, then finished with a caramelized brûlée crust. The distinctive aroma of caramelized sugar harmonizes with the rich sweetness of mango, creating a deep and nuanced flavor. Fresh mango is tucked inside the ice, and shiratama (soft rice dumplings) on top add a pleasing contrast in texture. The result is a tropical-scented creation that signals the arrival of summer.
