Furuyu Onsen ONCRI (General Manager: Keisuke Majima; 44 guest rooms; located at 556 Furuyu, Fuji-cho, Saga-shi, Saga), part of The Collection of Cool & Glamorous Alliance (CCG Alliance) operated by C&G Value Design Co., Ltd., will hold a Yakuzen Miso-Making Workshop on Thursday, October 29, 2026, at its in-house bar and restaurant, SEBRI.
Following a well-received first session, this will be the workshop's second run. Guided by instructor Mikiko Kamachi, participants will make their own yakuzen miso using salted koji, soybeans, black soybeans, and Job's tears (adlay), while learning the basics of fermentation and the ingredients involved. After the hands-on session, participants will enjoy a light meal made with yakuzen miso before finishing the day at Furuyu Onsen, a hot spring with roughly 2,000 years of history. The day-trip workshop brings together fermentation, medicinal cuisine, food, and hot spring bathing in one experience, limited to the first 16 people on a reservation basis.
Background
While interest in the origins of food and the work behind it continues to grow, fewer people now have the chance to make miso from scratch at home. Miso-making, which takes time as fermentation unfolds, offers a richness found in observing the changing seasons and ingredients along the way. Furuyu Onsen ONCRI hopes to offer guests not only healing through its hot spring, but also time to engage with food and culture and reflect on everyday life.
Three Features of the Yakuzen Miso-Making Workshop
1. Learn the basics of fermentation and make your own miso
Mikiko Kamachi, an International Chinese Medicine Dietary Therapy Manager, will explain the fermentation process and the ingredients used as participants work through the steps of making yakuzen miso. Participants get hands-on and experience Japan's fermentation culture directly.
2. Taste the yakuzen miso
After the hands-on session, a light meal made with yakuzen miso will be served. Through both making and tasting it, participants can discover the depth and new appeal of miso, an ingredient many people eat every day without giving it much thought.
3. Head to the hot spring after the meal
After the light meal, participants will head to Furuyu Onsen, a hot spring town cherished since ancient times as a place for therapeutic bathing. The workshop closes with a soak in the mountain valley's gently warm water, rounding off an autumn day unique to ONCRI.
