MINAKI, a luxury Japanese sake brand operated by REBORN Co., Ltd. (headquartered in Minato, Tokyo), is releasing a new product called GENKYO. Starting March 30, 2026 (Monday), lottery sales will open to registered members via the MINAKI official online store.
GENKYO is a limited-edition sake based on a junmai daiginjo milled to 17% polishing ratio. The sake is aged in French oak barrels that previously held white wine, then further matured in a sub-zero environment to precisely develop its flavor profile. The result aims for a light and refined taste with a subtle vanilla note and hints of wood from the barrel, while keeping roast characteristics to a minimum. After approximately seven months of barrel aging, each bottle undergoes individual sensory evaluation to determine the ideal moment for bottling. Only 300 bottles will be produced.
Why GENKYO Was Created
The starting point for GENKYO was a desire to push beyond conventional Japanese sake and bring a new dimension of its appeal to wine and whisky enthusiasts. The product was conceived as a gateway to "unexplored expressions" within the world of Japanese sake.
Balance was the central concern throughout development. Pushing the barrel character too strongly risks losing the essence of Japanese sake; holding back too much diminishes the value of the concept. To walk this fine line, barrels that had rested white wine for over a year were selected, and the toast level of the wood was deliberately kept low. Every design specification was adjusted to preserve the inherent elegance of the sake.
GENKYO is not simply set in barrels and left to age. Tasting frequency is increased at each phase of maturation, and the approach is to "capture" the peak moment rather than wait for a fixed endpoint. This bottle-by-bottle evaluation is what guarantees the quality of the limited release — not a fixed flavor target, but always aiming for the highest point at a given moment.

White Wine Barrel × Sub-Zero Aging
While traditional Japanese barrel sake typically uses cedar barrels to impart the characteristic woody aroma, GENKYO instead uses French oak barrels that were previously used to age Koshu white wine. The aim is to layer the subtle vanilla and wood notes from the oak over the clean transparency of the sake. Barrel aging is set at approximately seven months to leave a light, sophisticated wood aroma.
Maturation takes place slowly in a sub-zero environment of minus 2 to 3 degrees Celsius, gently settling the flavor without sudden changes.


AROMA
A subtle vanilla note from the white wine barrel quietly mingles with hints of wood. The opening is vibrant but not overstated, offering a composed and dignified presence.
PALATE
The entry is supple, with transparency arriving before any sense of weight. The barrel character contributes contour without disrupting the overall balance.
TASTE
Richness and lightness coexist, with roast tones kept understated. The long, expressive finish characteristic of a junmai daiginjo is gently supported by the depth of the barrel.
AFTERTASTE
Sub-zero aging delivers a clear, lingering finish. The aromatic impression remains, stretching softly before fading quietly.
