The cookie sandwich from Wishbon, a confectionery company based in Yokohama, is made by blending juicy pineapple flesh and a pineapple & passion fruit paste into homemade fresh caramel, then sandwiching it between specially crafted cookie dough and baking it.
The sweetness is carefully balanced by blending several types of sugar to bring out the depth of caramel while keeping the overall flavor restrained. The soft, gentle texture is complemented by the refreshing tartness of tropical fruits, making it a refined treat well-suited to the warmer months.
