A new specialty shop "yop poolside yogurt" featuring yogurt ice cream and rice flour hotcakes opens in Onna Village, Okinawa. The shop started its pre-opening on Friday, August 15, 2025, and will have its grand opening on Monday, September 1st.

The yogurt ice cream features fresh raw milk from cows that roam freely in pastures, creating a rich yet refreshing aftertaste. The focus goes beyond milk fat content to emphasize the natural "sweetness of milk" and "lightness of texture." Combined with yogurt's refreshing acidity, this creates an addictive, refreshing flavor profile.
The shop uses carefully selected ice cream machines with precise air incorporation and temperature control to achieve a special texture where the milk aroma hits immediately upon tasting, followed by a clean, refreshing finish.

The rice flour hotcakes are made at Tokyo's popular Togoshi Ginza shop "Pedra Branca." Using domestic rice flour from Niigata Prefecture, these gluten-free and additive-free treats offer a body-friendly option. The fluffy and moist texture is complemented by Okinawa-exclusive menu items like "Bacon Egg Hotcakes" and "Fruit Platter," enhancing the tropical resort atmosphere.
4. Specialty Coffee

The coffee menu features specialty beans roasted using direct-fire methods to maximize each bean's individual characteristics. Options include both hot and iced varieties, with plant-based selections like oat milk lattes available. The coffee pairs beautifully with the hotcakes and ice cream offerings.

The development process involved visiting dozens of ice cream shops across Japan and internationally for taste comparisons. Over 30 different ingredient formulations were tested through more than 100 tastings.
