If you're in Hakata, tonkotsu ramen is an absolute must!
It's known for its rich, creamy white broth made by simmering pork bones for hours, and Hakata-style ramen is typically served with ultra-thin noodles and has the famous "kaedama" (extra noodle refill) culture.

One of the most popular spots is Ramen ShinShin, which has a clean, mild flavor that's surprisingly easy to enjoy even if it's your first time trying tonkotsu ramen.
They have several convenient locations—Tenjin (main shop), Komondo-machi, Hakata Deitos (at Hakata Station), KITTE Hakata, Fukuoka PARCO, and Amu Plaza Kokura—so it's easy to stop by wherever you're exploring.

And of course, you can't talk about Hakata without mentioning mentaiko (spicy cod roe)!
It's pollock roe marinated with salt, chili, and seasonings, and a beloved Japanese ingredient often enjoyed with rice, onigiri, or pasta.

To enjoy it in a fun way, try a "mentai France" (mentaiko baguette) — it's one of the best ways to savor Hakata's flavor.
FULL FULL is known as the original bakery that created mentai France, and you can try it fresh at THE FULL FULL HAKATA (near Kushida Shrine and Canal City) or at their main store in Higashi Ward.
Fresh out of the oven, it's piping hot with a crispy crust and a soft, chewy inside — absolutely delicious! 🥖✨
