BISTRO NONKI Opens Its 4th Location in Shinagawa

A new outpost of BISTRO NONKI has opened in Shinagawa, marking the brand's 4th location (and 30th overall for its operating group). Located inside Shinagawa Intercity in Minato, the restaurant caters to a wide range of occasions — from after-work drinks and casual dinners to business entertaining — with a menu that balances bold flavors and a space refined enough to welcome a diverse crowd.

Seared Wagyu Beef with a Signature Rich Sauce

The signature beef dish at BISTRO NONKI features a 200g block of domestic wagyu "Ranichi" (rump-round) — a cut prized for its balance of tenderness and deep, beefy flavor. The meat is seared at high heat to lock in the juices, then sliced tableside on a hot iron plate. A robust sauce made from onion and soy sauce is poured over the top to finish. It is recommended to enjoy this dish alongside the restaurant's signature brodo-cooked rice.

BISTRO × Kama-Cooked Rice: Brodo Rice and Seasonal Variations

One of the defining concepts behind BISTRO NONKI is its combination of bistro-style cooking with Japanese kama (iron pot) rice. The rice is cooked in brodo — a Western-style stock made from meat and vegetables — which infuses each grain with savory depth. The standout item is the Garlic Rice made with whole-roasted Aomori garlic from Yoshida Farm, finished with house-made garlic oil for a fragrant, richly flavored result.

Seasonal mixed rice dishes prepared with locally sourced ingredients are also available, offering a visually appealing and satisfying addition to the menu.

A Varied Selection of Antipasti to Start

Slow-Cooked Dishes: Trippa and Beyond

The trippa at BISTRO NONKI is one of its specialties. Honeycomb tripe and large-cut beef tendon are slowly braised in a blend of two tomato sauces over an extended period, developing a rich, concentrated flavor. The dish represents the kind of careful, time-intensive preparation that sets it apart.

Alongside the trippa, the menu includes a range of other braised dishes, such as pork cheek braised in red wine.

Wine and Original Cocktails

Wine selection

The drinks menu covers red, white, orange, and sparkling wines available by the glass or bottle. A lineup of original cocktails — including sparkling cocktails, sours, and non-alcoholic versions made with ingredients like pineapple, mint, Lambrusco, rosemary, pear, and basil — rounds out the beverage offerings.
