Hanamaru Udon Launches "SANUKI 870 ALE," a Craft Beer Upcycled From Leftover Udon Dough

A new craft beer born from the udon-making process has arrived at Hanamaru Udon.

Better life with upcycle, an upcycle craft beer brand, has teamed up with Hanamaru Co., Ltd., the operator of "Hanamaru Udon," to create an upcycled craft beer called SANUKI 870 ALE (Sanuki Hanamaru Ale), made using the leftover dough trimmed from the edges of noodles during udon production.

It is now available for a limited time at 34 Hanamaru Udon locations, for on-premises dining only, and will be discontinued once supplies run out.

A New Kind of Value, Born From the Udon-Making Process

Making udon inevitably produces leftover dough trimmed from the edges of the noodles to keep quality consistent.

SANUKI 870 ALE is a craft beer created by using that trimmed dough as part of the malt.

By giving new purpose to an ingredient that held plenty of value but had few uses, and turning it into something delicious, the beer proposes a new way to help reduce food loss.

The two companies wanted to deliver what the makers had poured their hearts into with as little waste as possible, to contribute to society in even a small way, and to share a delicious, fun experience with as many people as possible. It was from these shared wishes that this project was born.

Quantities are limited, so it will be discontinued once the planned supply runs out, even before the promotional period ends. It's a special drink that comes with an upcycling story only a udon specialty restaurant could make possible.
