White Chocolate and Berry Mousse

This mousse cake combines vanilla-scented white chocolate mousse with cassis and raspberry cream and jelly, creating a layered flavor experience. The sponge cake incorporates almonds for a moist texture and rich depth. The surface is coated with white chocolate for a gentle white appearance, topped with salt-vanilla-flavored white chocolate whipped cream, gold leaf, and heart-shaped white chocolate for an elegant decoration. The combination of white chocolate's smoothness and berry tartness creates a memorable taste, complemented by the beautiful cross-section.

During the period, a lunch course combining the White Chocolate and Berry Mousse with choice of appetizer and main course (3 dishes total) will also be available.
Additionally, for the white cake that can match any color, an in-restaurant plan with an "Oshi-iro Drink" in your choice of 9 colors is available. Enjoy your own "oshi-katsu" (fan activity) time with photos alongside your favorite colored drink.

A new White Day seasonal addition to NAMIKI667 Pastry's popular cream puff series. The crispy baked puff pastry is filled generously with vanilla-scented white chocolate cream, accented with raspberry jam. The puff pastry and raspberry jam use organic sugar, offering a gentle sweetness and sweet-tart flavor contrast. Finished with a dusting of white chocolate, it's perfect as a White Day gift. Limited to 20 pieces per day, it's recommended as a companion for Ginza strolling or as a small gift.

Takao Ishida, Executive Chef, NAMIKI667

After experiencing the opening of THE FRENCH KITCHEN at Grand Hyatt Tokyo in 2004, Chef Ishida developed broad knowledge and advanced techniques in cooking and ingredients through challenges at various famous restaurants and foreign-affiliated hotels in different business formats. In 2014, he was appointed as sous chef at THE FRENCH KITCHEN at Grand Hyatt Tokyo, contributing to menu development and kitchen organization. In 2017, he moved to Hong Kong to join a two-Michelin-starred Japanese-French restaurant as sous chef, exploring French menu development incorporating Asian ingredients. In 2018, he was appointed as chef at all-day dining Selaale and Cucina Selaale at Hyatt Regency Seragaki Island Okinawa, engaged in overall management of the hotel's food and beverage facilities. In 2021, he became executive chef at ANA InterContinental Beppu Resort & Spa, overseeing the entire dining division and developing creative cuisine.
