The premium Japanese sake lounge Ikkon Fugetsu by Perie Chiba, located on the 3rd floor of Perie Chiba directly connected to JR Chiba Station, is bringing all 28 sake breweries of Chiba Prefecture under one roof through a rotating monthly collaboration project. Following the first collaboration with Miyazaki Sake Brewery in May, June 2026 features Iinuma Honke — a venerable brewery from Shisui with over 300 years of history. The collaboration runs from June 1 (Mon) through June 30 (Tue), 2026.

Background: A Monthly Series Featuring All 28 Chiba Breweries
Ikkon Fugetsu relaunched its lunch menu in April 2026 around the concept of "tasting Chiba." The venue deepened this experiential approach by launching a monthly series that spotlights each of the 28 breweries in Chiba Prefecture in turn. Rather than simply serving sake, the project pairs each brewery's story and craft with locally sourced seasonal ingredients — promoting Chiba's sake culture on an ongoing basis.
June Collaboration: Iinuma Honke (Shisui)
1. Special Brewer Visit Event — Dinner Only, June 5 (Fri) and June 6 (Sat)
On the evenings of June 5 and 6, brewers from Iinuma Honke will be present at the lounge starting from 5:00 PM. Guests will have the rare opportunity to hear directly from the people behind the sake about 300 years of brewing tradition and craft, while sampling the signature Kinoene (KINOENE) lineup.

2. Limited Pairing Set — Available Throughout the Collaboration Period
During the collaboration period, three types of sake from Iinuma Honke — junmai, junmai ginjo, and junmai daiginjo — are each paired with a specially crafted dish by the Ikkon Fugetsu head chef using seasonal Boso Peninsula ingredients.

6. Special Retail Sales — Available Throughout the Collaboration Period
Rare and limited-edition bottles from Iinuma Honke that are not normally stocked at retail stores will be available for purchase at the lounge during the collaboration period. They make ideal gifts or souvenirs for sake enthusiasts.

7. Early Access: Kinoene Junmai Ginjo KINOENE LODESTAR
Released to the general market in July, KINOENE LODESTAR typically sells out immediately upon release each year. During the June collaboration, guests at Ikkon Fugetsu can try this year's batch before it goes on sale elsewhere. Bearing the name "lodestar" (a guiding light), it is a modern junmai ginjo characterized by vivid aromas of apple and banana with a juicy, sweet-and-tart finish.

The Kinoene Sake Lineup

1. Kinoene Junmai Ginjo KINOENE LODESTAR
A next-generation junmai ginjo from Iinuma Honke, blending traditional Nanbu Toji brewing techniques with state-of-the-art equipment. The result is a fruity and juicy profile with aromas of banana and apple, packaged in a refined modern bottle design.
2. Kinoene Junmai Namagenshu Dai-Karakuchi Natsu-nama
A summer limited release that is sharply dry and refreshingly clean while still delivering the rich umami of namagenshu (unprocessed raw sake). A fitting pairing for fresh Boso seafood and produce.
3. Kinoene Junmai Daiginjo Namazake Jikakumi
Bottled straight from the press in a "jikakumi" style that preserves the lively sparkle of freshly pressed sake. The elegant aromas and refined sweetness of junmai daiginjo make this a seasonal highlight.
4. Kinoene Junmai Ginjo Hanayaka Takumi no Kaori
A junmai ginjo with a beautifully floral aroma that opens further in a wine glass. Crafted by master Nanbu Toji brewers, it has a smooth, translucent sweetness and a clean finish.
5. Kinoene Junmai Ginjo Namazake Ringo (Apple)
An innovative sake made with white koji, producing a distinctly fruity, sweet-and-sour profile reminiscent of apple juice or white wine. Low in alcohol and highly approachable, it is recommended even for those new to sake.
6. Kinoene Junmai Daiginjo Yamadanishiki 50
Made with the prized Yamadanishiki rice polished to 50%, this signature junmai daiginjo from Iinuma Honke offers a gentle, dignified aroma and a mellow depth of flavor that pairs well with a wide range of dishes.
