Iinuma Honke (飯沼本家), a sake brewery in Shisui Town, Chiba, that has continued for more than 300 years since the Edo period, holds "Shuen Shisui no Yoake 2026" (酒宴・酒々井の夜明け2026) over two days, Friday, November 6 and Saturday, November 7, 2026. The venue is Kinoene Omoya (きのえねomoya).
The banquet celebrates and enjoys the freshly made junmai daiginjo "Shisui no Yoake" (酒々井の夜明け). Kinoene Omoya is a Japanese restaurant set in a farmhouse about 300 years old that has been renovated and is a Registered Tangible Cultural Property.
"Shisui no Yoake" is the Kinoene (甲子) sake nouveau. On the day this season's junmai daiginjo is first pressed, it is bottled and shipped within 24 hours of pressing. The banquet runs for two days starting on the shipping day itself. Guests can enjoy this rare limited sake, produced after an all-night effort, together with a course meal from Kinoene Omoya on the same premises.

1. A Special Course of Twenty-Four Solar Terms Cuisine
Kinoene Omoya, which has Koichi Tomizawa (冨澤浩一) of the renowned Nihon Ryori Yoshimura (日本料理 よし邑) as its advisor, serves a special menu available only at this event.
Built around the concept of "Shisui no Yoake," the dishes make lavish use of autumn seasonal ingredients: zensai, maehassun, wanmori (soup), mukozuke, yakizakana (grilled dish), nizakana (simmered dish), and susumezakana. A meal and sweets follow, all plated with the elegant presentation particular to this season.

2. Pairing With Junmai Daiginjo "Shisui no Yoake"
The sake has a bright, fragrant aroma, the fresh fizziness unique to freshly pressed unpasteurized sake, and a crisp, clean acidity. Its youthful, fruity flavor brings out the best in dishes made with seafood. It goes naturally with Japanese food, such as dishes using slightly sweet, rich miso, and it also pairs well with Western ingredients such as cheese.
At "Shuen Shisui no Yoake 2026," other sake selected by Iinuma Honke are also served to match the dishes.

Old beams and fittings blend with interiors by contemporary artists, and the garden shows the changing seasons. Seasonal dishes are prepared under the supervision of the head chef of the renowned Yoshimura (よし邑), and guests can try special sake available only at the brewery.
