The newly launched mala tang at Kayu San-chin is a perfect dish for warming both body and soul during the cold season. The soup, infused with chili peppers, Sichuan peppercorns, and numerous aromatic spices, delivers a gentle warmth throughout your body with each sip. The dish features six carefully selected ingredients including wood ear mushrooms, steamed chicken, tomatoes, and cabbage. Kayu San-chin's porridge inherits the philosophy from "Shaho Den," an authentic Chinese restaurant founded in 1967 that values the medicinal food concept—"authentic Chinese porridge that energizes the body from within." In China, warming the body is considered essential for health under the medicinal food philosophy, and the restaurant's ginger-infused porridge, cooked slowly each morning from raw rice in homemade broth※, gently warms the body from within while providing rich nutrition and flavor.

※The base uses dried scallops (enhanced in umami through drying), kelp (a Japanese staple), and chicken broth, all cooked fresh in-store every morning.
