Hakata wagyu comes from cattle raised by registered "Hakata Wagyu Producers" in Fukuoka Prefecture. Farmers prioritize the health management of their cattle, feeding them rice straw abundantly harvested from Fukuoka's rice-producing regions, and carefully raising them over a long period of approximately 20 months. The meat is tender and yields plenty of juices when chewed, filling the mouth with rich umami flavors. This "tender and juicy deliciousness" has earned an excellent reputation.

Hakata Jidori: Born to Enhance Fukuoka's Local Cuisine

This local chicken was developed to make Fukuoka's regional dishes like "mizutaki" (chicken hot pot) and "gameni" (chicken and vegetable stew) even more delicious. About Nadaman

Nadaman's history began in 1830 (Tenpō 1) during the Edo period when the founder, Nadaya Mansuke, established a restaurant in Osaka that would become the foundation of the ryotei "Nadaman."

In 1919 (Taishō 8), the third-generation Nadaya Mansuke accompanied Prince Saionji Kinmochi to Europe as a chef during the Paris Peace Conference. In 1986 (Showa 61), the first official state banquet at a private facility during the Tokyo Summit was held at "Nadaman Honten Sazankaso." In 2005 (Heisei 17), Nadaman represented Japanese cuisine at the Aichi Expo.

For over 190 years from the Tenpō era to the Reiwa era, Nadaman has preserved the traditions of Japanese cuisine while evolving to match the times and customer preferences, bringing Japanese food to people not only throughout Japan but around the world.
