On Saturday, June 27, 2026, Fairfield by Marriott Kyoto Kyotanba will host a sake tasting event in collaboration with Kizakura, a sake brewery based in Fushimi, Kyoto. The event is part of the Fairfield by Marriott Michi-no-Eki Project's initiative to offer hotel guests hands-on experiences that connect them with the cultural heritage of the local region.

Fushimi, Kyoto, has long been one of Japan's leading sake-producing districts, with a brewing tradition supported by exceptionally pure underground water. Kizakura, founded in 1925, uses "Fushimizu" water drawn from the same underground vein as the "Gokosui" spring—the first spring listed in Japan's Top 100 Famous Waters. This medium-hard water, balanced in potassium and calcium, promotes stable fermentation even at low temperatures, yielding sake with a clean, delicate, and refined character. The brewery polishes its rice slowly and carefully to remove components that could affect aroma and flavor, and experienced brewers oversee every stage from koji preparation through fermentation and aging.

Sake Lineup

The tasting will feature a selection of Kizakura's distinctive varieties:

  • Shiboritateginjo Genshu – A seasonal limited release available from June through August, brewed from "Gin-ohmi" sake rice grown in Shiga Prefecture blended with Gohyakumangoku, using Fushimizu water. It offers a fragrant aroma and the deep, full-bodied flavor characteristic of undiluted sake.

  • Kizakura Perle – Named after the French word for "pearl," this sake features a smooth mouthfeel with a refreshing acidity from wine yeast and a gentle sweetness from rice. It is a welcoming option for those new to Japanese sake.

  • Kizakura Highball Yuzu Sake – A sake-based highball infused with aromatic yuzu juice, lightly sweetened and finished with a clean citrus acidity.
