On June 26, 2026, SAPPORO STREAM HOTEL's 7th-floor venue "BAR & GRILL Splish" will host a special one-night event called "STREAM JAZZ & Parfait Night," blending Sapporo's iconic late-night parfait tradition — known locally as "shime parfait" — with live jazz performance.

The hotel's theme, "DEEP COMMUNITY," focuses on forging deep connections with the local area through food, culture, and people. With June marking the summer solstice and the shortest nights of the year, the event aims to make Sapporo's limited summer evenings all the more memorable.

Limited Menu: "Modulation" Parfait

The centerpiece of the evening is a specially crafted limited parfait created by the hotel's pastry chef. Inspired by the concept of "modulation" in jazz — where a melody shifts dramatically from one key to another — the parfait is designed to change its flavor profile with every bite.

Upper Layer: Yuzu & Cacao Modern Session

The first half of the parfait features maple and walnut ice cream, a refreshing yuzu mousse, and bittersweet cacao gelée. A hint of thyme adds aromatic depth to the bittersweet, modern combination.

Lower Layer: Peach Melba's Grand Reveal

After breaking through a chocolate plate and reaching the base of the glass, the flavor dramatically "modulates" into a vibrant peach melba-style parfait. Vanilla parfait, juicy peach compote, and tangy framboise spread across the palate — a rich, dramatic finish reminiscent of a saxophone and piano crescendo.

The patissier notes: "I designed the upper layer with the bitterness of cacao and the freshness of yuzu, transitioning dramatically to a fresh peach melba in the lower layer — just like a key change in jazz. The meringue music staff and notes decorating the top of the glass add a visual musical element. I hope guests enjoy this special parfait with all five senses, accompanied by the warm sounds of live performance."

Live Performance: Saxophone & Piano

From 8:00 PM to 10:00 PM, professional musicians Ricky (saxophone) and Ayami Tanaka (piano) will perform live.

In addition to his work as a saxophonist, Ricky produces live entertainment that fuses music, dance, and local culture. Rooted in Soul, Jazz, and Funk, his warm, melodic saxophone style has taken him from live houses to hotels, restaurants, and community events, including collaborations with domestic and international artists.

Ayami Tanaka (Piano / Keyboard)

A pianist, keyboardist, composer, arranger, lyricist, and vocalist, Ayami Tanaka is known for her flexible musical sensibility and a playing style that is both delicate and groove-driven. Her repertoire spans jazz, soul, and pop, and she performs across a variety of settings from live houses to concert halls and hotel lounges.
