Shinagawa Prince Hotel Serves Limited-Time "Shime Parfait" Night Desserts at TABLE 9 TOKYO

A limited-time "Shime Parfait – A Reward of Sweet Lingering Elegance" menu is available at DINING & BAR TABLE 9 TOKYO, located on the 39th floor of the Shinagawa Prince Hotel's Main Tower. Running from May 1 to August 31, 2026, the menu features two artfully crafted parfaits designed to be enjoyed from dusk onward, with panoramic views of the city spread out below.

"Shime parfait" – the idea of rounding off the day with an indulgent dessert – has been growing as a new dining culture in Japan. Taking inspiration from this trend, the hotel has introduced two parfaits as elevated night desserts: the "Emerald Matcha Parfait" and the "Moonlit Citrus Parfait."

Emerald Matcha Parfait

Matcha – widely popular both in Japan and internationally for its depth of flavor and health-conscious appeal – takes center stage in this creation. Rich and smooth uji matcha cream is layered with the refreshing acidity of lemon jelly and sorbet, with chewy matcha warabi mochi nestled in the middle. Crispy feuilletine wafers at the base add a pleasingly salty, textural finish to each last bite, evoking the lush green gardens of early summer.

Moonlit Citrus Parfait

Vivid layers of citrus are transformed by the pastry team into cream, sauce, and ice cream, harmoniously paired with white chocolate. A tuile made from tapioca powder crowns the dessert, adding a delicate crunch and an air of refined elegance – fitting for a summer evening under the moonlight.
