What is Nankan-age?
Nankan-age is a type of fried tofu that may not be widely known outside of Kyushu, but in Kumamoto it is cherished as a local soul food. Compared to ordinary fried tofu, it has a longer shelf life and a fluffy texture. It can be used in a wide variety of dishes, including miso soup, simmered dishes, and braised recipes.
