Natto Specialty Shop NATTO SHA Grand Opens at VISON in Mie on October 31

On Saturday, October 31, 2026, a natto specialty shop called NATTO SHA (納豆舎) will have its grand opening at VISON, a commercial resort complex in Taki, Mie Prefecture.

The shop offers a new way to enjoy natto: not just eating it, but learning about it, tasting it, and choosing the kind that suits your own preferences.

Inside are two spaces: NATTO BAR, where natto takes center stage on the menu, and NATTO CELLAR, where visitors can choose products while learning about the history of natto making and the depth of fermentation.

To mark the opening, the VISON store is introducing four types of "fresh hikiwari natto" (minced natto) sold only at this shop. Along with regular soybeans, the lineup includes edamame, red beans, and black beans, which are uncommon choices for hikiwari natto. NATTO BAR and the takeout corner also offer menu items that can't be found anywhere else, including a set meal for comparing different fresh hikiwari natto and an original sweet made with steamed beans before they become natto.

Change the beans, and natto gets even more interesting.

The newly released fresh hikiwari natto is made with an emphasis on the taste of freshly made natto and is sold exclusively at the VISON store. Four types are available: soybeans, plus edamame, red beans, and black beans, which are rare for hikiwari natto.

Even with the same hikiwari style, a different type of bean changes the color, aroma, and umami. Each bean has its own character, and the texture is unique to hikiwari. Comparing them is a chance to discover flavors of natto you may not have known before.

Fresh Hikiwari Natto Nori-Wrapped Set Meal (納豆舎の生ひきわり海苔包み膳)

A set meal for comparing three kinds of fresh hikiwari natto and finding your favorite.

This is an original NATTO SHA dish in which fresh hikiwari natto is wrapped in nori seaweed and enjoyed with rice.

Diners compare three kinds of fresh hikiwari natto, noticing how flavor and texture differ from bean to bean, and find the taste they like best. Trying them one bite at a time is a way to discover the depth of natto that many people eat without a second thought.

Diners wrap each natto in rice and nori themselves and eat it one-handed. The differences in flavor and texture between beans can be enjoyed in a combination of your own choosing.

Steamed Beans and Kuromitsu Rice Soft Sundae (蒸し豆と黒蜜の米ソフトサンデー)

Beans before they become natto, turned into a sweet.

This is NATTO SHA's new take on enjoying beans as a dessert: an original sundae made with soft serve from carefully selected rice, topped with plump steamed beans from before they become natto, and finished with kuromitsu (Japanese brown sugar syrup).

It brings together the gentle sweetness and texture of steamed beans, smooth rice soft serve, and the richness of kuromitsu. It's a dish that only a natto specialty shop would offer, and it lets visitors taste the beans before they become natto.

NATTO CELLAR: Choosing Natto the Way You Choose Wine

Learn about 76 years of history and enjoy the differences in beans and fermentation.

The taste, aroma, and texture of natto vary greatly depending on the beans used, the fermentation time, and the degree of aging.

NATTO CELLAR is a place to learn about that depth and find natto you like. Visitors can learn about the natto making that has been passed down for 76 years since the founding in Matsusaka, Mie Prefecture, discover how taste differs by type of bean, fermentation, and aging, and then choose a product.

Among the products, "Hitotsuki Natto" (ひと月納豆), which is aged for a month, lets visitors enjoy the way flavor changes with time and fermentation.

From the natto you always eat to natto you haven't met yet. NATTO CELLAR offers this new kind of encounter with natto, much like choosing a wine.

Carrying 76 Years of Natto Making into the Future

The roots of NATTO SHA lie in the natto making that has been handed down for 76 years in Matsusaka, Mie Prefecture.

The shop was born from the idea of protecting the techniques and wisdom that have been passed down while expanding their possibilities and connecting them to a new food culture.

Flavor changes with the type of bean. Aroma and umami deepen as fermentation time goes on. And there are free ways of eating and enjoying natto that aren't bound by past assumptions.

Knowing changes how you choose, and choosing changes how you taste. Each of those discoveries opens up new possibilities for natto.

The shop's message is 「発酵は、未来志酵。BEYOND NATTO.」 Beyond natto.
