Two limited-edition shaved ice desserts are set to make their debut at THE TENDER HOUSE DINING, located along Shirokanedai's Platinum Street in Tokyo's Minato district. Available from June 1 (Monday) through August 31 (Monday), 2026, the seasonal menu features a collaboration piece produced by shaved ice specialist Asako Harada alongside a creation from the restaurant's in-house patissier.

Inspired by "macedoine," a fruit punch popular in Peru, this shaved ice interprets the dish through mango and pineapple. A deep crimson syrup made by reducing hibiscus and red wine forms the base, layered with the refreshing notes of key lime with lychee fragrance, mango, and pineapple. Hidden within the ice are hints of coriander and cinnamon. A drizzle of black sugar molasses along the rim of the vessel adds a rich depth that further accentuates the tropical sweetness — a cup full of exotic surprises.
About Asako Harada

Born in Kanagawa Prefecture in 1983 and a mother of one, Asako Harada is a dedicated shaved ice enthusiast known as the "Queen of Shaved Ice," having appeared on TBS's Matsuko no Shiranai Sekai. After falling for the dessert when she tried an authentic matcha shaved ice in Kyoto about 20 years ago, she went on to open her own shaved ice shop, Kooriya mamatoko, in 2016 while working as a fashion magazine writer and in real estate development. She continues to research and enjoy shaved ice every day.

A passionate sauce of red peach and guava meets the elegance of "White Cacao," a rare variety said to make up only about 0.002% of global cacao production. Nestled within the ice are scoops of ice cream made with the rare Peruvian fruit lucuma and acai, alongside a fragrant banana caramelize. The juicy freshness of fresh white peach and the flavor transformation offered by a separate "almond milk & white peach sauce" on the side make this a layered and indulgent dessert creation.
