Japan's Champion Edamame "Tsumari Chamame" Is Now Available as a Naturally Brewed, Additive-Free Miso

"Tsumari Chamame" is a variety of tea edamame that has won first place in Japan's national edamame championship twice. In addition to selling the beans fresh at peak ripeness, the producer has also offered frozen versions to allow people to enjoy the seasonal flavor year-round.

However, as with all agricultural produce, weather and harvest conditions can make it difficult to deliver every batch in perfect fresh condition. "Tsumari Chamame Omiso" was developed with fermentation as a way to give these exceptional beans a new form and extend their value.

About the Miso

"Tsumari Chamame Omiso" is a miso brought to life over 11 months, combining the twice-crowned tea edamame, Uonuma-grown Koshihikari rice, and the natural fermentation environment of a Niigata brewery.

Rather than serving simply as a seasoning, the miso was crafted to enhance the depth of a dish — acting as a foundation for cooking while also complementing and supporting the main ingredients.

Beans | Japan's Champion Tea Edamame (Tsumari Chamame)

The same two-time national champion edamame is used in this miso. It offers a rich aroma, natural sweetness, and a deep umami flavor.

Koji | Uonuma Koshihikari

100% Uonuma Koshihikari rice is used with a high koji ratio, allowing for stable fermentation even at lower salt levels and drawing out a clean, sweet flavor.

Water and Brewery | Niigata's Fermentation Environment

The miso is aged through all four seasons at a Niigata brewery. The natural environment drives the fermentation process, developing a layered, complex flavor.

Production Method

9% Salt Content

This is not a reduced-sodium product. The salt level is carefully calibrated to bring out the full aroma and sweetness of the tea edamame while preserving the delicate flavors of broths and dashi.

11-Month Natural Brewing

By aging the miso through a full cycle of seasons, stable fermentation is achieved even at lower salt levels, resulting in a mellow and deeply satisfying taste.

No Additives

No alcohol (sake spirit) is added — the miso is finished through natural fermentation alone.
