Wine Brewing Academy 2026 Applications Now Open at an Urban Winery in Tokyo

Fukagawa Winery Tokyo is now accepting applications for the 2026 edition of its "Wine Brewing Academy," a structured course designed to teach participants the art of winemaking from the ground up.

The program is a practical, all-in-one course covering both the foundational theory of winemaking and real hands-on work in the winery. Beginners are welcome, as the curriculum is built to guide students step by step through the entire process.


What Makes This Academy Special

Systematic Learning from Basics to Practice

Lectures cover a wide range of winemaking fundamentals, including wine overview, the components of grapes and wine, white and red wine production processes, microorganisms in winemaking, and the role of sulfurous acid. Sensory evaluation and tasting basics are also included.

Hands-On Experience at the Actual Winery

Participants take part in real winery work, including destemming and crushing, pressing, fermentation management, racking, filtration, and bottling. There is no limit on how many practical sessions students can attend.

Small Class Size in an Urban Setting

Held at Fukagawa Winery Tokyo, the small-group format keeps classes intimate, making it easy for students to ask questions and engage directly with instructors. An optional lecture on urban winery management is also available for those interested.

Lectures (8 sessions total)

Four days of curriculum covering winemaking basics:

  • Wine overview
  • Components of grapes and wine
  • White wine and red wine production processes
  • Wine and microorganisms
  • The role of sulfurous acid
  • Tasting basics and sensory evaluation

Practical Sessions

Scheduled from early August through mid-December 2026 (subject to change based on grape availability):

  • Destemming and crushing
  • Pressing
  • Pigeage / Remontage (stirring grape skins to extract color and aroma)
  • Fermentation management
  • Racking
  • Filtration
  • Bottling

Completion Benefits

Upon finishing the program, participants receive a completion certificate along with one bottle of wine they helped produce during the course, complete with a personalized original label.
