About Kanazawa's Wagashi Tradition
Kanazawa is recognized as one of Japan's three major confectionery regions. Despite the challenges following the Noto Peninsula earthquake, Kanazawa's traditional wagashi makers continue to share the appeal of their time-honored confections.
For this event, eight wagashi shops belonging to the Kayukai (the youth division of the Ishikawa Prefecture Confectionery Industry Association's Kanazawa branch) have gathered to present new confections created specifically for this occasion, all themed around pistachio. The event will feature live demonstrations by artisans, with freshly made wagashi available for purchase.
About Kayukai: A youth division for confectionery shop owners and confectionery business operators under 45 years old. Members actively participate in events throughout Kanazawa City and at department stores nationwide to promote Kanazawa's wagashi culture.

Okashidokoro Tsubaya: Wa-Ritozzo Pistachio

A luxurious Japanese-style dessert that sandwiches abundant soy milk cream between dorayaki pancakes. This special "Wa-Ritozzo Pistachio" version is prepared exclusively for this event, generously coated with pistachios and garnished with raspberries for accent.
