Hotel New Otani's directly operated hotels in Tokyo, Makuhari, and Osaka are introducing a new creation at their Patisserie SATSUKI shops. The "Amaou Castella Shortcake" will be available through March 31, 2026, combining premium "Hakata amaou" strawberries—known as the "king of strawberries"—with castella, a representative Japanese confection.

Shortcake is a classic dessert, and Hotel New Otani has continuously pursued innovation in this category. The hotel introduced the "Super Shortcake" to commemorate its 40th anniversary and has continued to develop various shortcake variations over the years.

The new "Amaou Castella Shortcake" represents another evolution in this tradition. Instead of traditional sponge cake, the dessert boldly features castella, a traditional Japanese confection. The castella is made with sun-raised eggs from Nagasaki Prefecture and incorporates wasanbon sugar along with fragrant honey orange blossom honey, creating a gentle flavor profile. The result is a castella with fine texture, dense yet moist consistency, and a fluffy mouthfeel.

The cream uses rich yet light fresh cream from Omuta, Kyushu. By blending wasanbon sugar in a proprietary ratio, the patisserie has created an elegant harmony that connects the castella base with the amaou strawberries.

It's topped with Omuta fresh cream, large amaou strawberries, and accented with the hotel's original multigrain "J Cereal" sable for added texture.

Additionally, each hotel is hosting an "Amaou Sweets Fair" with various formats including sweets buffets and afternoon tea featuring amaou strawberries.
