Criollo's "Caramel Fair" Brings Rich, Mellow Caramel Sweets to Three Tokyo Stores

Criollo, a patisserie operated by Ecole Criollo Inc. (headquarters: Itabashi-ku, Tokyo; CEO: Rei Kubota), is holding a "Caramel Fair" from Tuesday, September 1 through Wednesday, September 30, 2026, at its main store (Kotake-mukaihara, Tokyo), Nakameguro store, and Azabudai Hills store. The fair at the main store begins one day later, on Wednesday, September 2. A wide array of rich, fragrant caramel sweets comes together for the occasion.

Shoe Caramel

Shoe Caramel — ¥590 (tax included)

A carefully baked cookie choux is generously filled with deep, rich caramel custard, with a molten caramel sauce tucked inside. It's finished with caramelized pecan nuts on top, creating a satisfying cream puff where the full richness of caramel can be enjoyed.

Tarte Aurélia

Tarte Aurélia — ¥760 (tax included)

A fragrant tart shell is layered with a chocolate ganache enriched with sour cream. The smooth ganache, known for its refreshing aftertaste, is paired with a peanut florentine for a pleasing contrast in texture — a satisfying yet light tart.

Caramel Fraise

Gaïa

Gaïa — ¥720 (tax included)

A perennial favorite and one of Criollo's signature cakes, "Gaïa" won the Entremet category at 「世界パティスリー2009」. Smooth vanilla mousse and caramel cream are layered with a crisp, crunchy nut base and a moist almond sponge baked with plenty of almonds.

Layer upon layer of contrasting textures draws out the character of each ingredient, coming together in a finely balanced creation.

A whole cake is also available as a standard item — 12 cm whole: ¥4,000 (tax included), 15 cm whole: ¥5,600 (tax included).

Phantom Gaïa Cheesecake

Phantom Gaïa Cheesecake — ¥2,080 (tax included)

A special cake that fuses Criollo's No. 1 sweet, the "Phantom Cheesecake," with its signature "Gaïa," winner of a world championship. A soft, melting cheesecake is layered with a deep, mellow caramel made with Guérande salt, finished with the crisp crunch of caramelized pecan nuts as an accent.

Caramel Chocolat Parfait

Caramel Chocolat Parfait — ¥1,300 (tax included)

A luxurious parfait layering two flavors of soft serve — chocolate and milky. A moist chocolate sponge is tucked inside, finished with a generous drizzle of housemade caramel sauce.
