Minimal - Bean to Bar Chocolate -, a Japan-born specialty chocolate shop operated by βace Inc. (Shibuya, Tokyo), is introducing two new autumn desserts at Patisserie Minimal Soshigaya-Okura: a "Fruit and Chocolate Parfait – Shine Muscat and Grapes" and a "Japanese Chestnut Mont Blanc Assiette Dessert." Both are available on weekends only from October 3 to November 29, 2026, with reservations scheduled to open on September 20.
Fruit and Chocolate Parfait – Shine Muscat and Grapes

This special parfait layers juicy, in-season Shine Muscat and grapes with a range of distinctive chocolates across 14 different components, built to showcase the flavors of autumn.
The top layer combines a chocolate ice cream that pairs cacao's fruity notes with the bright aroma of Earl Grey, alongside a tangy-sweet grape, raspberry, and red wine sorbet. It's finished with a classic French confection called "プレオール" for a toasty, crisp texture and satisfying bite. Shine Muscat, grapes, and a cacao pulp gelée add further layers of fresh fruit acidity, giving the top a light, refreshing character.
The base layer brings together smooth almond tofu, a red-wine-scented grape sauce, and a rich chocolate sauce made with Ghanaian cacao. The mix of components changes the flavor with every spoonful, closing with the lingering chocolate finish expected from a specialty chocolate shop.

Japanese Chestnut Mont Blanc Assiette Dessert

Built around Japanese chestnuts from Kasama, Ibaraki Prefecture, this mont blanc layers a cacao and hazelnut meringue, chocolate genoise, chocolate sauce, a light whipped cream, and more chestnut, so each bite offers a different flavor.
A chocolate garnish with a nutty, cacao-derived richness adds visual presence while deepening the chocolate character of every bite.
The mellow, refined sweetness of the Japanese chestnut is set off by a cassis-and-chocolate ice cream and a cassis-and-red-wine sauce, whose crisp acidity keeps the overall flavor light.
A cacao nib nougat rounds things out with nutty sweetness, toastiness, and a pleasant textural accent.
Layering the deep flavors of autumn chestnuts and cacao onto a single plate, it's a mont blanc that keeps changing through the last bite.
