Gunma's Soul Food "Yaki-Manju" Comes to Seven-Eleven Stores Across the Prefecture

Starting April 21, Seven-Eleven stores in Gunma Prefecture will stock "Yaki-Manju," a cherished regional specialty that locals consider the soul food of Gunma.

Yaki-Manju is a local dish consisting of fluffy white dough painted with a rich, sweet-spicy miso sauce and grilled until fragrant. The product was developed by drawing on Seven-Eleven's expertise in original bread and pastry creation, with particular care given to ingredient sourcing and fermentation temperature and timing to achieve a distinctively light, airy texture.

For the miso sauce, a high-temperature grilling machine — the same kind used for grilled onigiri — is put to work. The sauce is applied to both sides and grilled in a process repeated three times, followed by an additional coating on top after plating. The result is a bite-sized treat that fills the mouth with an aromatic, savory-sweet flavor.

Development of the product began after franchise owners in Gunma asked for a commercially available version of the local staple. The development team researched the methods used at specialty shops to define their standards for fragrance and texture, and finalized the product using manufacturing processes unique to Seven-Eleven.
