Just 20 units will be available starting at 12:00 PM on Friday, March 6, 2026.
Birthstone Tart – March Aquamarine: An Ice Tart That Looks Like a Real Gemstone
The Birthstone Tart series features kohakuto (Japanese amber sugar candy) cut and shaped to resemble actual mineral specimens, then arranged dramatically on top of an ice tart. Each month's design is based on that month's birthstone and sells in limited quantities — consistently selling out.
March's design centers on aquamarine, the birthstone for the month. The stone's characteristic clear, light-blue transparency is recreated using soda-flavored kohakuto, arranged in three dimensions to mimic the look of a freshly cut mineral.
The base of the tart is Harapecolab's original cassata cream, made from high-quality ricotta cheese and fresh cream. It's enriched with pistachios, cashew nuts, Belgian chocolate, and red currants for depth, with raspberry and lemon peel adding a refreshing acidity. The tart is best enjoyed after letting it sit at room temperature briefly, until the cream just begins to soften.
When the tart went on sale for the first time on February 20, 2026, it sold out in under 10 minutes. In response to the many requests for a restock, a limited run of 20 units has been arranged.
A Stone Language Card Comes Included
Each tart ships with a card featuring the stone language of aquamarine: "Composure," "Courage," and "Intelligence." Aquamarine, with its clear blue reminiscent of calm ocean water, is said to carry various powers including "a charm for a happy marriage," "safe travels," and "enhanced communication."
