Birthstone Tart – November Topaz & Citrine: A Monthly Favorite That Sells Out After Release
A November edition joins the Birthstone Tart series, an ice tart prepared in limited quantities every month. According to the maker, each month's tart sells out after sales begin.
November's birthstones, topaz and citrine, shine in golden tones. Here they are expressed with lemon-flavored and caramel-flavored agar confection, cut piece by piece by artisans and assembled like crystals that hold light inside. The base of the tart is a cassata cream made from fresh cream and ricotta cheese, with nuts, raspberries, and lemon peel adding accents of texture and flavor. The cold cream sets off the crisp tart shell and the agar confection. The tart is meant to be admired like a gemstone, then cut and eaten.

The Stone Meanings of November's Birthstones
The stone meanings of topaz include "friendship" and "hope," and those of citrine include "happiness" and "prosperity." Each tart comes with a card describing these meanings, so it can also be given as a gift that carries a message. It suits a birthday present for someone born in November, as well as a gift to express everyday thanks or congratulations.

Made for Taste as Well as Looks
The Birthstone Tart has a gem-like appearance, but Harapecolab says it cares about balancing visual beauty with good flavor. The cassata cream is made with fresh cream and ricotta cheese. The richness of nuts and chocolate is accented by the refreshing flavor of lemon peel and the sweet-tart taste of raspberries. The gentle sweetness and texture of the agar confection, which evokes topaz and citrine, adds another layer, so the tart offers a range of flavors down to the last bite.
After the tart is taken out of the freezer, cut, and eaten, it thaws little by little. The texture moves from cold and ice-like to a smooth, melting cream. Diners can choose how far to let it thaw to enjoy a different texture and flavor.

November Koubutsu Wokashi – Birthstone Topaz & Citrine: Kohakuto Known for Its Crisp Texture
"Birthstone Koubutsu Wokashi" is a monthly, limited-quantity kohakuto themed on that month's birthstone. For November, the box is based on golden topaz and on citrine, a yellow variety of quartz. It holds kohakuto in warm colors that evoke autumn light.
The pieces take a variety of forms. Some resemble raw natural stones, and others look like beautifully cut gems. There is also a gradient inspired by "ametrine," a stone that combines amethyst and citrine. Artisans cut each piece by hand while imagining the character of each mineral, so no two pieces have the same shape. The outside is crisp and the inside is soft, a texture that has also drawn attention for ASMR, and each color has its own flavor.

Each color offers a different flavor.
