Hidakaya, the Chinese diner chain with locations across the Kanto region, is giving its most popular menu item — gyoza — a makeover this spring. The renewed gyoza, along with four new side dishes and a limited-time highball campaign called the "W Highball Festival," are all set to launch on March 27, 2026.

Gyoza Gets a Lighter, More Approachable Makeover

The gyoza renewal focuses on making the chain's signature dish easier to enjoy. While the current version features a chewy, thick skin and richly flavored filling, the updated gyoza switches to a lighter, crispier skin that stays tender even after cooling. Fried garlic replaces raw garlic in the recipe, reducing lingering odor while maintaining a satisfying depth of flavor.
