Winter in Kanazawa now comes with a stay plan built around the season's best seafood. Hotel Kanazawa will begin selling a special overnight plan on December 1, 2026 (Tue) for a limited time. It combines the "Hokuriku Meguri Kaiseki," a dinner that features three of Hokuriku's signature winter ingredients, sweet shrimp (amaebi), snow crab (zuwaigani) and yellowtail (buri), with the hotel's breakfast buffet.

Savoring Hokuriku's Winter

Winter is known as the season when Hokuriku shows off its food, drawing attention from across Japan. Ingredients raised in the harsh winter Sea of Japan are rich in fat and deep in umami. Hotel Kanazawa's chefs prepared this kaiseki to bring out the natural character of each ingredient, with the aim of making a winter trip to Kanazawa more memorable.

All Three of Hokuriku's Winter Delicacies

The menu covers all three of Hokuriku's celebrated winter flavors: sweet shrimp with a melt-in-the-mouth sweetness, snow crab (often called the king of winter flavors), and yellowtail rich in fat and umami. Each dish is crafted with care, and together the courses are meant to feel like a tour of Hokuriku on the palate.

  • Sashimi: Thinly sliced yellowtail with yolk oroshi ponzu

  • Grilled dish: Grilled snow crab
  • Fried dish: Arare-fried ebi-imo taro with crab-meat sauce

A Morning Taste of Kanazawa

Breakfast at Hotel Kanazawa is a buffet of more than 40 Japanese and Western dishes, featuring seasonal flavors, seafood from the Sea of Japan and produce from the Noto satoyama countryside. Using cooking methods handed down in Kanazawa, the spread is packed with "jiwamon" (local ingredients), so guests can enjoy the city's food culture from the start of the day.

The guest rooms follow a "samurai residence" concept, with a Japanese-modern design that adds the colorful touch of Kaga Gosai (the five colors of Kaga).
