Hotel Kanazawa (Horikawa-shinmachi, Kanazawa City, Ishikawa Prefecture) is launching a new stay plan that pairs its popular all-you-can-drink dinner course "SAN (燦)" with a morning breakfast buffet, available for reservation starting July 1, 2026. The plan is served at DINING TSUZUMI, the all-day dining restaurant on the first floor, and runs through December 20, 2026.
A New Way to Enjoy Kanazawa — "Hotel Drinking" Without the Crowds
As tourist demand around Kanazawa Station has grown in recent years, getting a restaurant reservation on weekends and busy travel seasons has become increasingly difficult. Hotel Kanazawa's new stay plan addresses the desire to enjoy great food and drinks without worrying about crowds or transportation home. Whether for a couple's getaway, a group of friends, or a small personal treat, the plan offers a refined hotel dining experience that differs from a typical izakaya outing.

Dinner Course "SAN (燦)" — The Flavors of Ishikawa
The six-course dinner makes use of local Ishikawa ingredients, taking guests from appetizers through to dessert with a menu designed to complement drinks throughout the evening.


Starters and Pasta — The appetizers include a burrata cheese herb salad, house-cured salmon marinade salad, and a duo of bruschettas featuring smoked duck with tomato and soft salami. Pasta is prepared with seasonal ingredients.
Main and Dessert — The main course is a slowly roasted Noto pork (能登豚) prepared by low-temperature cooking for a tender, juicy result. A house demi-glace sauce infused with miso and whole-grain mustard brings out the natural sweetness of the pork. To close, a hojicha (roasted green tea) blancmange rounds off the meal with a gentle harmony of Japanese and Western flavors.

Hotel Kanazawa's morning buffet features over 40 Japanese and Western items, drawing on seasonal produce, Japan Sea seafood, and ingredients from the Noto Satoyama region. Traditional Kanazawa cooking methods are used to highlight locally sourced ingredients known as "jiwaamon," making for a morning meal that showcases the region's food culture.
