Hotel Metropolitan (1-6-1 Nishi-Ikebukuro, Toshima-ku) is launching a new autumn flavor of its "Seasonal Parfait" at the Mezzanine Lounge "Suzukake" starting September 1, 2026 (Tuesday). The new creation by the hotel's pastry team pairs shine muscat grapes with black tea in a lavish presentation.
The parfait brings together the bursting sweetness and refreshing aroma of shine muscat grapes with the rich fragrance and deep flavor of black tea, building delicate layers that shift in character with every bite. Its elegant presentation, fitting for the art-filled autumn season, adds color to teatime in the lounge's open, airy atrium.
Shine Muscat and Black Tea Parfait
The parfait is generously filled with shine muscat grapes prepared in a variety of textures — fresh fruit alongside compote and compote jelly. Inside the glass, a crunchy crumble, a richly fragrant black tea cream, and a light black tea chiffon are layered together, while cream cheese chantilly and apricot sauce tucked into the lower layers add a deep accent. The refreshing sweetness of the shine muscat and the black tea's rich body bring the whole dessert into balance, so every spoonful offers a different combination of flavors.
The top is finished with a clean-tasting frozen yogurt, accompanied by an orange cookie and a delicate bergamot-flavored tuile (a thin baked cookie), for an elegant design fitting for the art-filled autumn season. A separately served mirabelle (a type of plum) sauce can be poured over the top for a refreshing change in flavor, keeping every bite interesting through to the last spoonful.
