Hotel Metropolitan (1-6-1 Nishi-Ikebukuro, Toshima-ku) is launching a new summer flavor of its "Seasonal Parfait" at the Mezzanine Lounge "Suzukake" starting July 1, 2026 (Wednesday). The new creation by the hotel's pastry team showcases peak-season fruits in a lavish presentation.
The parfait highlights the rich sweetness of juicy peaches paired with the refreshing tartness of raspberry, cranberry, and yogurt. Each spoonful reveals a different layer of flavor, offering a delicate and evolving taste experience. The vibrant, jewel-like colors shimmer like sunlight in midsummer, bringing a festive touch to afternoon tea.

Peach and Berry Parfait
The parfait is built around a white wine-poached peach compote, layered with a white peach sherbet blended with raspberry jam, vanilla ice cream, raspberry macaron, and almond cookies. Within the refreshing layers of yogurt cream, cranberry jelly, and white wine compote jelly, pieces of peach are tucked inside, adding depth to the aromatic flavor.
The bottom layer features raspberry sauce, topped with yogurt cream and finished with almond crumble for a satisfying texture contrast. An optional "peach and mint sauce" can be drizzled over the parfait to enhance the refreshing quality and keep the flavor changing until the very last bite. The exquisite balance of sweetness and tartness makes this a treat best savored during this time of year.
