At the "Hotel New Otani Christmas Cake Preview 2026," held at Hotel New Otani (Tokyo) on August 25 (Tuesday) and 26 (Wednesday), around 100 members of the media and influencers got their first look at the Super Mont-blanc. Chef Pâtissier Yudai Moriyama walked the group through how the dessert comes together, from stacking the various components onto the tart base to piping the mont-blanc cream. Attendees who tasted it shared a range of impressions:

This Year's Super Mont-blanc Puts the Spotlight on Texture

Built around a simple flavor that lets Japanese chestnut shine, the Super Mont-blanc is made up of nine distinct components from its base to its decorative top. Evolving every year, this edition is designed to be enjoyed for the variety of textures you encounter as you eat through it. Making its debut this year is the "wasanbon vanilla mochi," a springy, mochi-like layer with a bounce reminiscent of warabimochi that's rarely found in Western-style desserts. It sits alongside a moist tart base and a mont-blanc cream with the smooth texture of koshian (strained red bean paste), set off by the light crunch of baked elderflower meringue for a touch of floral brightness. At the center of the cross-section, steamed chestnuts from Ibaraki Prefecture are wrapped in a ganache montée made with cream cheese from Omuta, Fukuoka, and chocolate, finished to be rich yet light so every bite stays interesting to the last.

Geisha is a coffee varietal regarded as one of the finest among many, having gained worldwide recognition after taking first place at Panama's "Best of Panama" international competition in 2004. Low-yielding and highly prized for its rarity, it's a premium varietal that can fetch prices at auction rivaling gold or platinum. Cold brew — coffee extracted slowly at low temperature — is used here to carefully draw out Geisha's elegant aroma and refined flavor.

Produced using the meticulous washed process, it's defined by a clear, clean finish with a bright transparency. Its restrained bitterness makes it approachable even for those who don't usually enjoy coffee, while its depth of flavor continues to captivate enthusiasts.
