Aman Tokyo (Otemachi, Tokyo; General Manager Tomoko Yagi) is marking the peak of the harvest season with a lineup of autumn dessert menus available from September 14 (Monday) through November 15 (Sunday), 2026.
At The Lounge by Aman, two Shine Muscat–based offerings return for the season: a "Shine Muscat Afternoon Tea" and a "Shine Muscat Parfait," both built around grapes grown at the hotel's own contracted farm in Yamanashi Prefecture.
Meanwhile, The Cafe by Aman introduces a new dessert set, "Dessert d'Automne – Autumn Dessert Assortment," featuring a choice of three Mont Blanc flavors among its three-course lineup. Guests can enjoy a relaxed autumn tea time while taking in the gradually changing colors of the Otemachi Forest.

Since 2021, Aman Tokyo has grown Shine Muscat grapes with a contracted farm in Hokuto City, Yamanashi Prefecture — an area known for its clear air and dramatic mountain scenery. Chefs visit the farm every month, tending the vines alongside the farmers who share their dedication. The once-young vines have matured over the years, and the hotel has been able to harvest its own grapes since 2023.

Hokuto City is known for some of the longest hours of sunshine in Japan, and the grapes grown there are harvested carefully at the moment their sugar content and aroma reach their peak. The result is a rich sweetness balanced by a refreshing tartness characteristic of fully ripened fruit.
The Lounge by Aman: Shine Muscat Afternoon Tea

From September 14 (Monday) through November 15 (Sunday), The Lounge by Aman presents a "Shine Muscat Afternoon Tea" that showcases the grape at the height of its harvest season.
The tea begins with an amuse-bouche: a small parfait of Shine Muscat and lychee sorbet topped with a lemongrass espuma, its clean sweetness setting an elegant tone for the tea time ahead.
On the top tier of the three-tiered stand sit a Shine Muscat and Hokkaido yogurt tart and a Shine Muscat and coconut charlotte, both built around the fresh appeal of the fruit — the yogurt's bright acidity and the coconut's toasty aroma gently complement the grape's shining sweetness.
The middle tier features a French cream cheese and Shine Muscat cake alongside an elderflower mousseline, delicate sweets that express the juiciness of the fruit.
The bottom tier offers five savory bites selected by the chefs, including a citron confit– and thyme-scented snow crab rémoulade and a cervelle de canut tartlet, each pairing delicately with the elegant sweetness of the Shine Muscat.
An original trunk box also arrives at the table filled with three macaron flavors — Muscat tea, mojito, and Sonogi matcha, prized for its mellow umami.
Guests can enjoy freshly baked original Aman Tokyo scones and a seasonal beverage alongside the charm of Shine Muscat in season, for a refreshing afternoon.

At The Lounge by Aman, a seasonal evening parfait puts Shine Muscat in the spotlight: the "Shine Muscat Parfait."

The glass is filled generously with fresh Shine Muscat grapes, its delicate, concentrated sweetness lifted by the refreshing aroma of diplomat cream and a mint tea and Setouchi lemon gelée. Layered beneath are a coconut meringue and almond cookie for crunch, a Champagne and verbena granita, and a Koshu grape sorbet, sealing in a bright, festive flavor.
A baked cheesecake and yogurt chantilly cream add accent, with every spoonful bringing together rich depth, light acidity, and a variety of textures through to the last bite.
Guests can also add the accompanying Assam tea sauce for extra depth, drawing out further layers of the Shine Muscat's aroma.

The Cafe by Aman introduces a new dessert menu this autumn, "Dessert d'Automne – Autumn Dessert Assortment," a three-course set built around the season's choice ingredients, including a choice of Mont Blanc.
The first course is a fig compote in red wine with Madagascar vanilla gelato, a glass dessert that captures the juicy flavor of seasonal figs, served alongside a choice of tea or coffee to start the tasting.
The second course is the standout: a Mont Blanc, available in a choice of three flavors. Options include one made with Kuma chestnuts from Kumamoto Prefecture, prized for their large size, rich sweetness, and full aroma; one made with "ikka" pumpkin from Niigata Prefecture, known for its high sugar content and fluffy texture; and a bitter chocolate version layered with tart raspberry. Each is finished by the pastry chef only after it is ordered, so guests can enjoy the aroma and texture unique to a freshly made dessert.

The third course is a Shine Muscat and lychee vacherin, showcasing the juicy, refreshing flavor of Shine Muscat grapes grown at Aman Tokyo's own contracted farm.
