This holiday season, Fairmont Tokyo (1-1-1 Shibaura, Minato-ku, Tokyo; General Manager: Karan Singh) is bringing a 2026 Christmas collection themed "Timeless Celebration — Moments of Blessing, Passed Down" to its 35th-floor lounge. Reservations and sales for the various items open in stages starting October 1 (Thursday).

Drawing on the sensibility Fairmont has cultivated across more than a century of history around the world since its founding in 1907, the collection reimagines timeless Christmas traditions and flavors through a contemporary aesthetic.

The lineup includes three Christmas cakes infused with classic touches, takeout treats that reinterpret traditional confections loved around the world, and an afternoon tea featuring motifs and flavors synonymous with Christmas.

The result is a holiday season distinctly Fairmont Tokyo's own, pairing old-fashioned Christmas charm with a fresh sensibility.

All three Christmas cakes are finished in a quiet, refined white, each showcasing different ingredients and flavors while capturing the crisp beauty of white to express the elevated Christmas envisioned by "Timeless Celebration."

This cake captures the traditional flavors cherished during the Christmas season in France, the home country of Executive Pastry Chef David Guimaraes.

A compote of pear, prune, and orange is wrapped in a rich hazelnut mousse, while the base layers a hazelnut dacquoise and praline with milk chocolate seasoned with French salt, adding both aroma and textural contrast. Coated in white chocolate and finished with delicate whipped cream and dried meringue on top, the pristine white cake reveals a rich hazelnut mousse when cut — an unexpectedly deep flavor that contrasts with its clean exterior.

This shortcake uses two whole, uncut strawberry varieties, Kirapika and Amaou, a classic Christmas cake made special through careful attention to ingredients and craftsmanship.

Layers of light, smooth-melting cream made with milk from Hokkaido's Konsen region alternate with a moist sponge baked using free-range eggs from Yamanashi's Kurofuji Farm, finished with a hint of orange from Grand Marnier syrup. The richly sweet Amaou strawberries are tucked inside, while the elegant Kirapika strawberries top the cake — a luxurious shortcake whose simplicity lets the quality of its ingredients shine.

Christmas Afternoon Tea, Filled with Holiday Tradition and Playfulness

The French-style afternoon tea layers modern sensibility over long-held Christmas traditions, offering sweets and savories exclusive to the season.

The sweets lineup embraces motifs synonymous with Christmas, including a playful "Christmas Present," a white chocolate gift box concealing orange mousse inside, and a "Gingerbread Delice," notable for its smooth texture infused with five spices and its form modeled after a Christmas ornament. Savories showcase the character of each ingredient, from a "Chicken Ballotine" pairing chicken-and-mushroom ballotine with the sweet-tartness of strawberry jam and brioche, to a fragrant "Cauliflower Panna Cotta" combining smooth cauliflower panna cotta with scallop and black truffle.

The trolley service features five sweets, including a "Wreath Baumkuchen," baumkuchen coated in white chocolate and decorated with dried fruit and nuts to resemble a Christmas wreath, and a "Christmas Fruit Trifle" layering fruit compote with cinnamon-scented cream and speculoos.

Tea Palette at Fairmont Tokyo

The drink selection also includes a "Tea Palette," letting guests choose their own ingredients to build a personal "Christmas Tea." A holiday staple across Europe, Christmas tea blends tea leaves with spices and dried fruit for a spiced flavor well suited to warming up on cold winter days.

For the afternoon tea, a Christmas-exclusive Tea Palette pairs two black teas, "Assam C.T.C." and "Darjeeling Blend," with six spices, including cinnamon, clove, and star anise, alongside dried fruit.

During the same period, a "Japanese Winter Afternoon Tea" is also available, featuring seasonal winter ingredients to capture the shift of the seasons. As with the French-style afternoon tea, it comes with the trolley service and Tea Palette.
