Komugino Co., Ltd. (Chiyoda-ku, Tokyo; representative Naoto Sasayama) will grand-open a new soba brand, Juwari Soba Tamotsu ("Tamotsu"), on Saturday, July 18, 2026, on the first floor of "Kohoku Minamo," a commercial complex in Tsuzuki-ku, Yokohama.

Tamotsu serves juwari soba -- soba made purely from buckwheat flour -- with the goal of making its pure aroma and flavor easier to enjoy day to day. Its original "rough-cut" technique blends the smooth texture of thin noodles with the satisfying bite of medium-thick noodles in a single bowl, offering a new take on 100%-buckwheat soba.

The restaurant runs a soft-open period from Wednesday, July 1 through Friday, July 17, ahead of its grand opening on July 18. On opening day, the first 50 guests receive one bowl of the signature "Shinme Mori Soba" or "Tori Seiro" supervised by Chef Toba, free of charge, as part of an opening-day campaign.

Making 100%-Buckwheat Soba More Approachable

Juwari soba, made purely with buckwheat flour, lets diners enjoy the grain's rich aroma and flavor at their purest. It is often seen, though, as something best savored slowly at a specialty shop -- a slightly higher bar to clear.

Tamotsu aims to keep that authentic flavor while building a juwari soba shop people can stop into casually: between errands, on the way home from work, or for a family meal.

The project began with an idea from Takafumi Horie, who serves as the company's management strategy advisor: he wanted to build a truly delicious soba shop. Known widely as a serious soba enthusiast, Horie spent more than a year working on finding the right location and refining the menu without compromise.

Chef Shusaku Toba, who has partnered with Komugino on several past product and brand developments, joined the project after connecting with that vision. The restaurant's "Tori Seiro" (chicken dipping soba), supervised by Chef Toba, is one of its signature dishes.

Tamotsu's defining feature is its original rough-cut style. Each bowl blends the smooth, comfortable texture of thin noodles with the satisfying bite of medium-thick ones, so the mouthfeel changes bite to bite while the aroma of 100%-buckwheat soba carries through to the last bite.

Because juwari soba is made purely from buckwheat flour, it delivers the grain's flavor directly, but it also demands a delicate touch in kneading and boiling. Tamotsu brings in the latest noodle-making equipment and pairs it with hands-on craftsmanship, so it can consistently serve soba that is freshly made and freshly boiled.

The signature menu includes the "Shinme Mori Soba," a simple dish that highlights the aroma and rough-cut texture of the 100%-buckwheat noodles, and the "Tori Seiro" supervised by Chef Toba, which pairs freshly made, freshly boiled soba with a chicken-based dipping sauce built around the savoriness of chicken.
