KAGA Parfait Marks 10th Anniversary With New 2026 Edition in Kaga City

KAGA Parfait, a local specialty dessert built around locally sourced ingredients, is given a fresh design every year. Each version draws on ingredients grown in Kaga City together with the region's traditional crafts, resulting in a treat that captures the character of Kaga in both look and taste.

This year marks the tenth anniversary of KAGA Parfait's debut in 2016, and the milestone 2026 edition is now available at each participating shop, with servings starting July 25.

Where to Try KAGA Parfait

Each of the four participating shops has created its own distinctive parfait, expressing the area's charm and stories in its own way.

All four are priced at ¥1,800 (tax included).

Hazuchio Chaten (はづちを茶店, Yamashiro Onsen) — "Steam Parfait" (湯けむりパフェ), Dedicated to the Yatagarasu

Steam Parfait (湯けむりパフェ) at Hazuchio Chaten

Shio cider jelly represents the hot spring, spun sugar candy represents the rising steam, three-colored shiratama-fu evokes glowing skin fresh from the bath, and black sesame cream represents the Yatagarasu, the symbol of the hot spring's founding legend — together, more than 1,300 years of Yamashiro Onsen's history and stories are packed into a single glass. Its refined sweetness makes it a pleasant treat for strolling the hot spring town or resting after a bath.

Kaga Fruit Land (加賀フルーツランド, Hashidate) — "Orchard's Palette Parfait" (果樹園の彩りパフェ), an Edible Work of Kaga Craft

This parfait layers seasonal fruits — strawberry, pineapple, kiwi, blueberry, and more — with colors inspired by Kutani ware, Kaga City's traditional pottery craft. Alongside the fresh fruit, semi-dried orange adds a different texture and flavor. A cheese cream made with Kaga bocha provides an accent, keeping the parfait light all the way to the last bite.

cafe&bar Takanokura (髙乃蔵, Kaga Onsen Station) — "Kaga Meguri Parfait" (加賀めぐりパフェ), a Blend of Local Sake, Sweets, and Produce

Kaga Meguri Parfait (加賀めぐりパフェ) at cafe&bar Takanokura

Topped with dango and sweet red bean paste from local Japanese and Western confectioners, baumkuchen rusks, and fruit and vegetables grown in Kaga City, this parfait lets guests savor the full range of Kaga's appeal. A sponge cake and sauce made with sake lees from a local brewery round out the mix of ingredients in an exquisite harmony, while a layer of wasanbon sugar jelly at the bottom of the glass gives the parfait a smooth, gentle finish.

Cafe & Lunch Kasa no Misaki (加佐ノ岬, Hashidate) — "A Day's Transition Parfait" (一日の移ろいパフェ), Inspired by the Cape's Changing Scenery

Taking motifs like the lighthouse, the waves, the sunset, and a starry sky, this parfait expresses the way the scenery at Kasa no Misaki cape changes its expression over the course of a day. The toppings, each carefully made, also incorporate several kinds of vegetables, finished with a gentle flavor that lets the ingredients' own character come through. It's best enjoyed slowly, the way one might take in the cape's spectacular view.
