Kanazawa Tokyu Hotel (Kanazawa, Ishikawa Prefecture; General Manager: Tatsuya Doda) is holding its first-ever Silver Week Buffet at its 2nd-floor restaurant Marais d'Or for five days, from Saturday, September 19 to Wednesday, September 23 (a national holiday), 2026. The event celebrates Tigerair Taiwan's new twice-weekly flights — every Thursday and Sunday, starting Thursday, September 3, 2026 — connecting Komatsu Airport with Kaohsiung International Airport.
Wanting to bring Taiwan and the Hokuriku region closer together, the hotel's head chef, Suzuki, traveled to Kaohsiung ahead of the new route to sample the local flavors firsthand and recreate the recipes at the hotel. The buffet brings together Kaohsiung specialties such as fotiaoqiang (known in English as "Buddha Jumps Over the Wall"), a rich soup slow-simmered from dried delicacies like shark fin and scallops with Chinese herbal medicine, and hongxun migao, glutinous rice steamed with mud crab, alongside signature Hokuriku dishes including Hokuriku-style oden and Toyama black ramen.
Guests who reserve by Friday, September 18 receive an early-bird discount of ¥1,000 off per person (not applicable to ages 6 and under). Guests who dine at the buffet and complete a web questionnaire can also enter a sweepstakes for a round-trip Komatsu-Taiwan (Kaohsiung or Taipei) plane ticket and original Tigerair Taiwan merchandise.
The Head Chef Traveled to Kaohsiung Himself to Research Authentic Flavors
For this event, head chef Suzuki traveled to Kaohsiung, Taiwan in person. He learned authentic cooking methods directly from local chefs and walked through markets and eateries to experience the seasoning and use of ingredients firsthand, reflecting what he learned in the buffet's menu. One of the signature dishes, fotiaoqiang, is a famous Kaohsiung soup slow-simmered from dried delicacies such as shark fin and scallops with Chinese herbal medicine and spices. The rich depth of flavor and aroma, along with the use of spices experienced on site, has been carefully recreated.


A Taste of Kaohsiung in Every Dish
From beef shabu-shabu to hongxun migao — glutinous rice cooked with the rich flavor of mud crab soaked in — to da-ji-pai (a popular Taiwanese fried chicken cutlet, crispy outside and juicy inside) and xiaolongbao soup dumplings, the buffet lines up everything from street food to full-course dishes. The aroma rising from every plate and the surprise in every bite make it feel like traveling through Kaohsiung one dish at a time.

Alongside classic sweets like fluffy Taiwanese castella cake, tangy-sweet pineapple cake, and tapioca milk tea, the lineup also includes douhua (silky-smooth tofu pudding) and round, translucent Kowloon Ball jelly. Each treat shows a different side of Taiwanese sweets, offering new discoveries for both the eyes and the palate.

Hokuriku Flavors Alongside Oden and Regional Noodles
Standing alongside the Taiwanese lineup are local specialties from Hokuriku's three prefectures. Guests can enjoy Hokuriku-style oden made with kuruma-fu (ring-shaped wheat gluten), tororo kombu (shredded kelp), and Kaga vegetables, as well as a corner offering a choice of Toyama's famous black ramen, masu sushi (pressed trout sushi), Hanton rice, and Volga rice. It's a buffet where guests can savor two food cultures — Taiwan and Hokuriku — at once.
