A Marriage of Sweet "Strawberries" and Stimulating "Spices"

This spring's theme is "adult playfulness," not just simple sweetness. By pairing "strawberries," the symbol of spring, with spices and herbs like cardamom, cinnamon, and basil, the ingredients' profiles are brought into vivid relief. Hidden within the adorable appearance are rich aromas and stimulation. This new spring teatime experience engages all five senses.

Sweets: Adding Elegance with Spices to the Sweet Aroma of Strawberries

The lineup showcases the pastry chef's skills, including "Cardamom-Scented Basque Cheesecake" that adds a refreshing kick to rich cream cheese, and cream puffs where cinnamon brings out the sweetness of Noto Dainagon azuki beans.

Noto Dainagon and Strawberry Cream Puff: Rich custard and light fresh cream harmonize with the refined sweetness of Noto Dainagon azuki beans. Cinnamon sugar balances the overall sweetness.

Fraise Larme "Strawberry's Tears": A transparent glass dessert layering strawberry and white chocolate mousse with lychee jelly.

Others: Strawberry Mont Blanc tart, Uji matcha mille-feuille, strawberry roll cake, and more—7 varieties total.

Savory: Spring's Local Ingredients × Spice Magic with Herbal Accents

The savory items, crafted by the Grand Chef, abundantly use ingredients that herald spring in Ishikawa. Savory dishes combining "basil" and "pepper" with spices and herbs provide a welcome, authentic gastronomic experience between sweet treats.

Chai (Tea Masala) Steamed Bun

Bamboo Shoot Consommé Gelée with Ainu Negi Purée

Chai (Tea Masala) Steamed Bun: Chai-flavored dough with an original spice blend, accented by dried fruit and white chocolate sweetness.

Bamboo Shoot Consommé Gelée with Ainu Negi Purée: The texture of kinome herb-scented bamboo shoots paired with purée of rare Ainu negi (wild leek)—a taste of spring.

Paprika-Scented Chicken Liver Mousse Tart: Smoked paprika aroma and rich liver mousse hide yellow paprika paste. The fragrant polenta base adds an accent.

Cherry Snapper Marinated in Cherry Leaves with Cherry Gelée: Cherry snapper lightly seared to remove any off-flavors, marinated overnight in cherry leaves. Finished with cherry liqueur and white wine gelée in an elegant cherry-pink hue.

Basil-Scented Edamame and Cheese Choux: Choux pastry incorporating vibrant beet powder, generously filled with basil and edamame cream cheese. The refreshing herbal aroma fills your mouth.

Roast Pork Mimosa Style: Roast pork cooked low and slow to tender perfection, topped with sage-scented new onion vinaigrette. Garnished with sieved egg to evoke mimosa flowers blooming in spring.
