Kobe Beef Yakiniku Touma (神戸牛焼肉 當麻), a yakiniku restaurant offering a premium grilled-meat experience centered on top-grade Kobe beef, is adding a new lunch-only dish on Monday, October 12, 2026: the "Special White Taiwan Ramen – Kobe Beef Tallow Green Onion Salt × Shigureni." It is the second installment in a series of noodle dishes created in collaboration with Chef Nishimura (西村貴仁) of "Nishimura Men" (ニシムラ麺), a Michelin-starred chef who also serves as Chief Creative Officer (CCO) of Trailhead Global Holdings, the restaurant group's parent company.

Alongside the existing "Red Taiwan Ramen (Spicy Umami Style)," which showcases the ingredients and craftsmanship of a yakiniku restaurant, the new "White" bowl contains no spice and focuses entirely on umami. Together, they give lunch guests two signature dishes to choose from in addition to the restaurant's Kobe beef yakiniku.

Background: A New Option for Yakiniku Lunch

The first installment, "Red Taiwan Ramen (Spicy Umami Style)," has been served at lunchtime only and has been well received. Guests have reportedly shared comments such as "I'm not great with spicy food, but I'd like to try the soup made by Chef Nishimura with Kobe beef bouillon" and "I'd like more variety to choose from depending on my mood."

In response, Chef Nishimura and Touma developed the second installment as a new dish that broadens the enjoyment of lunch without taking away from the appeal of yakiniku: "a bowl that creates overwhelming satisfaction from the umami of dashi and ingredients alone, without any spiciness."

Collaboration With Chef Nishimura

Chef Nishimura earned one Michelin star in the fusion category and now serves as CCO of Trailhead Global Holdings, the group's parent company. The collaboration brings together his "dashi and noodle creativity that is not bound by convention" and the ingredient quality and craftsmanship of Touma's top-grade Kobe beef, with the aim of delivering authentic noodle dishes that go beyond what a typical yakiniku restaurant offers.

Fine Kobe beef tallow is used to slowly bring out the aroma of the special green onion salt, which adds depth and rich flavor to the clear soup.

Generous amounts of Kobe beef are simmered in Touma's special warishita (sweet-savory sauce) to concentrate the umami, creating a sweet-savory contrast with the saltiness of the soup.

Zero spice, 100% umami

Rather than relying on a spicy kick, the bowl is built only from beef broth, the savory aroma of green onion oil, and the sweetness of the meat, resulting in a gentle yet powerful soup that invites guests to drink it down to the last drop.

For the end of the meal, the set comes with "hitokuchi gohan" (a small portion of rice) to enjoy with the leftover soup. Guests can also switch the rice to the "Kobe Beef Yakiniku Meshi," topped generously with Kobe beef grilled over an open flame, so the meal moves from noodles to a meat-and-rice finale unique to a yakiniku restaurant.
