About the Flour

The chiffon dough uses "Shiro-gane Komugi," a wheat variety carefully cultivated in Kita-ku, Kobe City, and produced in-house by Kurofune. The chiffon is finished with a gentle, refined flavor that brings out the natural character of this wheat.

Starting June 3rd, the QUOLOFUNE LAB. at the Daimaru Shinsaibashi store will be serving "Kotoka Jelly Soda." The drink pairs a handcrafted Kotoka syrup and jelly with refreshing soda.
The syrup and jelly are crafted to bring out Kotoka's rich sweetness and crisp acidity. The overall balance is carefully considered — from the smooth texture upon first sip to the lingering finish — resulting in a nuanced and satisfying drink. The effervescence of the soda pairs well with the pleasant glide of the jelly.
