Gentle Pressing with a Winery Grape Press Preserves the True Flavor of Apples

The key feature is the use of a press machine designed for pressing grapes at the winery. Unlike the screw presses commonly used for apple juice production, the winery press employs a "gentle, not-too-strong pressing" method. With minimal heat generation, it prevents bitterness and astringency from developing, drawing out the fresh aroma and flavor inherent to the apples.

What's crucial in juice making is the selection of raw apples. Damaged parts and portions that would compromise flavor are carefully removed by hand, using only high-quality fruit. This meticulous process produces a clean, clear taste without any off-flavors.

Winemakers Who Know Wine Inside and Out Take on Apples

These apple juices were crafted by the winemakers at St. Cousair's Hill (Iizuna, Nagano Prefecture), who engage with winemaking daily. Yamazaki-san, who led the production, is one of them.

"I think both wine and juice share the same goal: 'how to bring out the goodness of the ingredients honestly.' I want to create juice that anyone, from children to adults, will say 'this is delicious.' I'd be happy if people could experience the appeal of Nagano apples just as they are."
