Mesm Tokyo, Autograph Collection (Minato-ku, Kaigan 1-10-30), a modern luxury hotel that resonates with the energy and rhythm of Tokyo, is teaming up for the third time with the New National Theatre, Tokyo — Japan's only national theatre dedicated to opera, ballet, dance, and contemporary theatre — for a dinner program designed to be enjoyed with all five senses: The Nutcracker. The limited-time program runs from Thursday, October 1, 2026 through Sunday, January 31, 2027, at the hotel's 16th-floor French dining restaurant, Chef's Theatre.

The program marks The National Ballet of Japan's production of The Nutcracker, staged at the New National Theatre from December 2026 into January 2027, and reimagines the ballet's dreamlike, sparkling story one plate at a time. Mesm Tokyo has collaborated with the theatre before, presenting dinners inspired by the opera The Magic Flute in December 2024 and the ballet Cinderella in October 2025. This time's theme, The Nutcracker, is a winter classic beloved around the world — a glittering Christmas Eve party, the battle between the Nutcracker and the mice, a shimmering land of snow, and a candy kingdom filled with colorful sweets. The course draws out five memorable scenes from the story and presents them as a sequence of French dishes, so that each new plate feels like a curtain rising on the next act.

The adorable characters, vivid colors, delicate decoration, and playful shapes of the ballet's fantastical, romantic world are recreated through the sensibility and skill of the chef team led by Mesm Tokyo's Culinary Meister (Executive Chef), Kouki Kumamoto. It's a heart-fluttering winter dining experience built around the charm and fantasy unique to The Nutcracker.

Amuse-Bouche — Theme: The Curtain Rises on a Dream

Five bite-sized amuses — liver pâté, a physalis and prosciutto bouchée, tuna with rémoulade sauce, a horse meat tartine, and marinated red sea bream — are arranged into a colorful plate reminiscent of ornaments decorating a Christmas tree. The tuna is paired with a wasabi-flavored rémoulade sauce, and the red sea bream is wrapped in a sheet of kombu dashi to draw out each ingredient's flavor. Komatsuna powder is scattered across the plate to represent the tree's greenery, and tasting the dish from bottom to top invites guests into the dream story about to unfold.

Appetizer — Theme: Midnight Battle

Shrimp Tartare with Cauliflower Mousse and a Purple Vegetable Garden

This dish captures the fierce midnight clash between the toy soldiers and the army led by the Mouse Queen, rendering the toy soldiers in red and white and the Mouse Queen's army in purple vegetables. The cauliflower mousse is layered with kuruma shrimp tartare and a clear tomato jelly, topped with a beet tuile. The purple vegetables are served as a salad alongside a daikon ravioli filled with fromage blanc and shallot — a plate where vivid color and varied flavor intersect to capture the dynamism of battle.

Main, Fish — Theme: Waltz of the Snow

Sautéed Fresh Fish with Lily Bulb and Crustacean Sauce

The fantastical "Land of Snow" takes shape in a delicate, white-toned dish. Gently sautéed white fish is layered with a smooth lily bulb purée and lily bulb itself, paired with a rich crustacean sauce made from concentrated shrimp flavor. A rice-based paste is shaped into a snow crystal and served with celeriac and white carrot to evoke a quietly spreading snowscape, revealing deep flavor within the dish's soft white palette.

Main, Meat — Theme: Feast in the Land of Sweets

Roasted Duck with Seasonal Vegetables and Red Wine Sauce

A playful dish inspired by the festive banquet in the "Land of Sweets." Fragrant roasted duck is paired with a rich fond de veau and red wine sauce, accompanied by sautéed mushrooms, blackberries, and beets with their foam, all arranged in vivid color. A candy cane infused with mushroom flavor, a fried potato resembling a croissant, and popcorn round out a main course that's as playful to look at as it is to eat.

Dessert — Theme: The Morning You Wake From the Dream

Caramel and Walnut Mousse with Mango and Passion Fruit Gelée

A playful dessert delicately shaped after the story's protagonist, the Nutcracker. Caramel and walnut mousse is layered with mango mousse, passion fruit gelée, and a crisp sucrée pastry base, while a vivid green herb-and-nappage sauce adds both flavor and visual accent. Finished with a chantilly cream carrying a subtle hint of alcohol, the dish closes the course on a sweet, refreshing note — a grown-up, playful plate to enjoy along with the lingering feeling of the morning after a dream.
