Minimal Launches Limited-Edition White Day Gateau Chocolat Featuring ONIBUS COFFEE in 4-Layer Design

Minimal - Bean to Bar Chocolate -, a specialty chocolate shop from Japan operated by βace Co., Ltd. (Shibuya-ku, Tokyo, CEO: Takashi Yamashita), will launch the "Coffee Gateau Chocolat -STEP BLEND by ONIBUS COFFEE-" for a limited time starting February 21, 2026, at Minimal's online store and Yoyogi-Uehara store.

A Gentle Harmony of Coffee and White Chocolate

Returning as a popular White Day season dessert at Minimal, this year's coffee-infused gateau chocolat is here again.

The dessert features ONIBUS COFFEE's "STEP BLEND," a pioneer of specialty coffee in Japan, paired with white chocolate in a light and elegant composition. Coffee is incorporated into the 4-layer structure in both espresso and ground bean (powder) forms, allowing guests to enjoy both the direct taste of coffee and its lingering aroma.

Guests can savor a comforting, cappuccino-like taste created by the harmony of espresso's pleasant bitterness and white chocolate's gentle sweetness.

A pure white, fluffy chantilly (whipped cream) beautiful to look at, finished with a dusting of coffee powder.

Espresso and White Chocolate Mousse

Espresso showcasing the vibrant flavor and lingering finish of "STEP BLEND" is combined with white chocolate and crafted into a light, airy mousse.

Coffee-Infused Chocolate Cream

High-cacao chocolate (80% cacao) made from Ghanaian cacao beans is blended with coffee into a cream that serves as an accent to the overall composition.

White Chocolate and Coffee Gateau Chocolat

A smooth gateau chocolat with the rich sweetness of white chocolate, mixed with coffee powder to bring out the direct flavor of coffee itself. Espresso is also brushed on top of the gateau chocolat, allowing the coffee aroma to linger in the aftertaste.

Minimal visits cacao-producing regions around the world and produces chocolate by hand from high-quality cacao beans, one piece at a time. Patissiers, chocolatiers, and artisans who have honed their skills at Michelin-starred restaurants and top patisseries in Japan and abroad work together as a team to create Minimal's chocolates and sweets, staying true to the fundamental principle of "carefully, simply, maximizing the finest ingredients and drawing out their aroma."

For the cacao ingredients, Minimal conducts research and provides lectures on fermentation and drying processes on-site, working with cacao farmers to develop flavors that meet high-quality, high-price standards. Aiming for sustainable economic independence in the cacao industry, which still bears remnants of plantation systems, Minimal engages in technical support and fair, ethical trade. In 2019, the company conducted cacao research in Nicaragua as part of a JICA ODA feasibility study project.
