Starting April 1, 2026, Minimal - Bean to Bar Chocolate -, a Japan-based specialty chocolate shop, will be serving a new spring-limited "Fruit Sandwich Cake" (15 servings per day) at its Tomigaya flagship store in Shibuya, Tokyo.

This new dessert takes the familiar form of a fruit sandwich and elevates it into a refined assiette dessert. Built around the classic "fruit sandwich" concept, it brings together original chocolate, fresh fruit, génoise sponge, and sauce in a carefully balanced composition — presented as a one-of-a-kind plated dessert enjoyed in-store.

The dish pursues the live freshness unique to plated desserts, resulting in a luxurious single serving that layers flavors and textures well beyond the conventional "sandwich."

Light Milk Chocolate Cream and a Rich Génoise Made with Premium Eggs

At the heart of the dessert is a special chocolate cream with a light, airy texture. The gentle sweetness of milk carries the caramel-nut richness and roasted aroma characteristic of Haitian cacao. Mascarpone is incorporated into the cream to subtly temper the cacao's presence, achieving a delicate balance that draws out the best of the seasonal fruit.

The génoise sandwiching the cream features eggs from Tanaka Farm in Saitama Prefecture — specifically the premium "Hogyokuran" brand eggs. Baked to a moist, flavorful finish, the sponge gently envelops the cream and fruit.

Completing the plate is a special sauce combining the vivid acidity of griotte cherries with fruity milk chocolate made from Madagascan cacao. The addition of seasonal herbs introduces a refreshing note that keeps each bite interesting through to the last.
